Oleic acid is an unsaturated fatty acid compound with the molecular formula C18H34O2. This composition results in an oily liquid with a pale-yellow color and no distinct odor. It is primarily obtained from both animal and vegetable sources, with olive oil being a notable example. Oleic acid is insoluble in water but soluble in organic solvents.

Oleic acid exhibits high stability against oxidation and can enhance the activity of antioxidants and anti-polymerization agents. When combined with antioxidants like tocopherols, it can effectively prevent oxidation when mixed with other oils, providing increased protection against oxidation.
